Full Day Classes all start with an introduction to tasting and understanding spices. Before the hands-on cooking begins, you will learn when and how to use spices, as well as what spices bring to Indian cuisine. Full Day Classes are suitable for confident cooks who want to learn new techniques and develop aromatic spicy flavours, while mastering all the components of a traditional, authentic Indian meal.

    This course is for those who enjoy eating lamb/ goat / chicken with dal. You will learn how to cook the tasty dish inspired from Parsi and Gujarati cuisine.

    –  Lamb Curry – This dish tastes of happy adventures of Gujarat, its amazing  tasty spicy masala are cooked in onion, tomatoes, vegetables and dal  of which the meat is added to this sauce.  GF / M

  • +Whole day Gujarati Indian Thali Course M/V

    This course is for cooks who want to explore traditional Gujarati food and learn how to create an entire meal for their family using complex and unique spicing.

    – For a starter we will be preparing and making a family recipe Gujarati bhajya. I will show you how to make the batter for the Bhajya, we will prepare the range of vegetables and you will learn how to spice the dish using a unique range of spices that   make these something very different to anything you have tasted. GF / V

    – As a main we will make a family favourite murghi, chicken curry that has a fantastic spicy, flavourful tomato sauce which forms the backbone of your curry. I will give you hints and tips of what makes a good sauce and explain how the sauce can be used in other curries. We will prepare the ingredients and cook the dish. GF / M

    – A popular side dish of potato and coconut curry will accompany the chicken dish and I will show you how tempering of oil with the spices will transform the flavours. GF / V

    – Perfect bhat – learn how to cook the perfect seasoned rice using cumin seeds. GF / V

    – Raitu – cucumber and mint relish my mother’s recipe which compliments the dish. GF / V

    – Finally, no thali is complete without fresh rotli (chapattis). You will learn how to make the dough, roll and use traditional tawri and jari to make this wonderful flat bread. V

  • +Indian Railway Tiffin Course V

    This course is for cooks who enjoy cooking a range of dishes and want to explore the use of spices creating easy to prepare vegetation dishes to create texture, sweet, sour, spiced flavour on the go. We will taste and understand the spices and create a range of dishes that will demonstrate a range of skills used in traditional Indian cuisine.

    – Firstly you will prepare and understand the spices used for spinach pakoras.  Learn how to combine spices, spinach with gram flour and fry them to perfection. This will be served with a raita.

    – Next, you will learn how to prepare a Channa masala. A classic combination of spices for chickpeas.  Accompanied with Luchi bread. GF / V

    Aloo Gobi – learn how to make this delicious North Indian dishes suitable for a starter that is perfect for any lunch or dinner. GF / V

    Chicken Tikka  – learn how to prepare the perfect marinade and spice chicken to perfection. GF / V

    Breakfast Paratha – you will learn how to prepare and cook these breads which are cooked in ghee, they are heavenly

    Perfect jeera rice – prepare the best rice cooked to perfection. GF / V

    This course is for cooks who enjoy cooking with spices and experimenting with flavour combinations.

    – For a starter we will be preparing and making Mumbai vegetable cutlets – a soft vegetable filling , coated in bread crumbs. You will learn how to temper oil with spices and learn how to prepare the cutlets to suit this Indian classic food to go dish V

    – You will also learn how to cook Rajasthani Laal mass – You will learn how to create a delicious rich gravy (spiced sauce) and achieve tender lamb which will melt in your mouth. GF / V

    – Next, learn to prepare and cook Punjabi Amritsari Dal using two different lentils, a variety of spices cooked in ghee. This delicious dal will transport you back to food served in the Golden Temple

    – Keralan Tamarind Prawns  you will learn how to extra the juices from tamarind, develop a marinade and cook a delicious curry using curry leaf and temper spices to perfection.

    – Finally, you will learn how to cook the perfect speedy  Rice  – how to make the perfect  rice and spice it to perfection

  • +Indian Food and Cider Paring M/V

    This course is suitable for cooks who enjoy cooking with spices and would like to learn how cider can pair with Indian food to create a fantastic range of dishes.

    – For a starter we will be preparing Cider Bhajya. I will show you how to make the light batter for the bhajya, we will prepare the range of vegetables and  you will learn how to spice the dish using a unique range of spices that  make these something very different to anything you have tasted. V

    – As a main we will make a Lamb and Aubergine Curry with complex subtle spicing which is cooked in a onions, tomatoes and aubergines. I will give you hints and tips throughout and you will learn how the spices work with the oak flavoured cider. GF / M

    – A side dish Pork and Butternut Squash Curry. I will show you how tempering of oil with the spices will transform the flavours. GF / M

    – Perfect Bhat – learn how to cook the perfect seasoned rice using cumin seeds. GF / V

    This session will give you an insight into how to create delicious dishes using traditional South Indian cooking techniques from tempering oil, learn about spice combinations and develop flavour using different Lentils, Fish, Pulses and Rice. The course is suitable for all ability cooks who are looking for new recipes to add to their repertoire. It will include the following:

    – Tasting and understanding of spices

    Masala dosa –  learn how to spice the dal and rice to create this delicious breakfast dish GF / V

    Sambal dal with vegetables– A delicious curry using tender free range chicken and dal tempered with a range of spices. GF / M

    – How to make traditional Coconut chutney using coconut and spices and learn how to temper oil to create a fresh dish GF / V

    – Making your own Masala fish this dish is my favourite. You will learn how to create a marinade and learn how to season the fish and cook it to perfection  GF / F

    – Bhajya – using seasonal vegetables and gram flour to create little tasty starters using chickpea flour and clever spicing GF / V

  • +Blending and Cooking with Spices M/V

    This  session will give you an insight into how to use and blend spices with confidence. Learn which spices are suitable for meat, vegetable, lentils and sweet Indian dishes. The course is suitable for all ability cooks who would like to explore the use of spices . It will include the following:

    – Tasting and understanding of spices

    – Making your own Garam masala blend GF /V

    – Spiced  Chicken and Mango Curry – a week day meal that uses succulent free range chicken thigh meat cooked in a range of spices and vegetables. GF /M

    Mixed Vegetable Curry  you will learn how a range of vegetables using Gujarati spicing . GF / V

    Spiced  Rice – lean how to cook the perfect rice GF / V

    – Finally, no thali is complete without fresh rotli (chapattis). You will learn how to make the dough, roll and use traditional tawri and jari to make this wonderful flat bread. V

    – Steamed Lapsi with Sultans & Almonds  – this is Bini’s mums favourite sweet dish. It is cooked with water and you will learn how to combine spices that work with Indian puddings. V

All the cookery lessons are 5-6 hours includes lunch and refreshments throughout the day and are hands on.
